one small onion, thinly sliced
three or four scallions or ramps, sliced
one bunch radishes, sliced; greens chopped
4 cu. water
one bunch watercress
olive oil, lemon, salt
sautee onions, scallions, and radish with pinch of salt for 3 mins.
add 4 cu. water. bring to boil and simmer 15 mins.
add watercress and greens, simmer 5 mins.
season with fresh squeezed lemon and salt to taste.
